Salmon Burgers with Sundried Tomatoes and Feta Cheese

¼cupchopped sweet onion
1garlic clove, minced
3, 5 oz.canscanned salmon, drained (12 oz. total)
¼cupchopped, oil-packed sundried tomatoes
¼cupcrumbled feta cheese
2tspdried basil
1largeegg
2tspfresh lemon juice
1 tspfresh lemon zest
¾cupplain bread crumbs, divided
¼cuplight mayonnaise
1tbsp Extra Virgin Olive Oil

Instructions
In a large bowl, gently mix the onion, garlic, salmon, tomatoes, cheese, basil, and ½ cup of the bread crumbs.
In a small bowl, whisk the mayonnaise, egg, lemon juice, and lemon zest together.
Add the mayonnaise mixture to the salmon mixture and gently combine it, being careful not to break up the salmon too much.
Divide the mix into 4 portions (about 1/3 - 1/2 cup each) and form into patties.
Place the remaining breadcrumbs on a plate and cover each patty with them.
Heat the oil on medium heat in a medium skillet. Once the oil is hot, place the burgers in the skillet and cook for about 5 minutes or until browned. Flip the burgers and cook an additional 5 minutes until brown. They should reach an internal temperature of 160 ℉.
