When summer hits, I’m often looking for something light, bright, and just a little unexpected for a quick treat. This Raspberry Lime Silken Tofu Mousse checks all the boxes. Bursting with the flavor of juicy raspberries and lime, it’s a refreshing treat that’s as satisfying as it is simple to make. 

The secret ingredient? Silken tofu. Yes, tofu! It blends up into a smooth, whipped cloud of goodness. It is easy to prepare and picks up the flavors of the berries and lime, and is just a bright, creamy delight.

Even better? This mousse offers more than flavor. Tofu is a plant-based powerhouse, filled with protein, calcium, and heart-healthy isoflavones, making it a smart choice for women looking to eat well and feel their best.

Part of the beauty of this mousse recipe is that it only takes 5 simple ingredients plus a little dash of salt. 

Ingredients to Make Raspberry Silken Tofu Mousse

Silken Tofu

Tofu gives this mousse its creamy and rich consistency. It’s much lower in fat than whipping cream, butter, and eggs, the traditional components of regular mousse, and it’s also a plant-based protein powerhouse. Tofu is rich in calcium and iron, and packed with isoflavones that may help support heart and bone health, especially important for women in midlife and beyond.

Raspberries  

These little ruby colored berries give the mousse a beautiful pink hue and bright flavor. They are loaded with fiber, vitamin C, and powerful antioxidants that help fight inflammation and support brain health. Paired with lime for a punch of fresh flavor, this mousse doesn’t just taste good—it feels good too.

Limes

The burst of zesty citrus flavor adds a brightness to these mousse cups. Along with the flavor burst from the oils in the lime zest, lime juice adds a bit of vitamin C to this treat. 

Maple Syrup

While perfect for adding some much-needed sweetness to the mousse, maple syrup also has antioxidants that may help with inflammation, along with a bit of zinc, manganese, and potassium that help support our immune system and blood pressure.  

Vanilla Extract

How to Make it

What I love about making silken tofu mousse is that there is no whisking and heating, and no worry that the eggs got hot enough to be safe. Just place everything in a food processor or blender and voila! 

Step 1 – Whip

Place everything in the bowl of your food processor or in a blender and whip until combined and creamy. The mixture should be a beautiful rose color.

Step 2 – Chill

Divide the mixture between serving dishes and cover tightly. Go as casual or fancy as you’d like. Chill for at least 2 hours.

Step 3 – Garnish and Serve

Top with fresh berries and a sprig of mint. If you’d like to add a bit of whipped cream on top. 

Variations

No raspberries? Swap in strawberries, cherries (pitted, of course 😉!), or blueberries. 

Silken tofu works best to make mousse, but you could also use firm tofu for a thicker consistency. This would work perfectly if you want more of a tofu whip or fruity tofu spread.

Can you use frozen fruit to make the mousse?

You can use frozen fruit in this, but you may end up with a thinner consistency. It might be worth using firm tofu instead of silken.

Can you freeze silken tofu mousse?

This mousse would make a delicious, creamy frozen treat. Freeze it in a freezer-safe 3 – 4 cup container with a lid. Scoop it out like ice cream. You could also make popsicles by pouring the mixture into a popsicle form.

Storage Tips

Store it in the refrigerator in a sealed container or individual cups or dishes.

  • ½ tbsp. vanilla extract
  • 2 tbsp. lime juice
  • 1 tsp. lime zest
  • tsp. kosher salt

Instructions
 

  • Place all ingredients in the bowl of a food processor. Blend until smooth. Taste and adjust seasonings as desired.
  • Spoon the mixture into 4 dishes for serving. Cover and place in the refrigerator for at least 2 hours. The mousse will firm up slightly.
  • Serve with mint leaves and fresh raspberries if desired.
