Almond Blueberry Energy Bites – Boost Your Day with These Delicious Snacks

It started as a simple kitchen experiment—just a craving for something sweet, wholesome, and satisfying after a long morning of writing. I grabbed a handful of ingredients I always keep on hand: almond butter, dried blueberries, oats, and almonds. A drizzle of honey, a dash of cinnamon, and a few spins in my food processor, and these almond blueberry energy bites came together. One bite in, and I knew this recipe was a keeper.

But what makes them more than just a tasty snack is what they do for your brain. 

Almonds and oats provide steady energy and essential nutrients like vitamin E and magnesium. Blueberries? They’re famous for their brain-protective antioxidants. Cinnamon adds flavor and nutrients that may help support cognitive function. 

All no-bake, all anti-inflammatory, and ready in minutes—these bites are as smart as they are satisfying.

What You Will Need to Make the Energy Bites

Ingredients for Almond Blueberry Energy Bites

Oats

Old-fashioned oats or quick cooking oats will work best for this recipe.

Almond Butter

If you are watching your sugar intake, stick with unsweetened. You can adjust the sweetness by adding a little more honey.

Dried Blueberries

Look for unsweetened dried blueberries. I find them in my local grocery store, but you can always order them if you have trouble finding them

Almonds

Blanched, slivered almonds work nicely for this. Chop ½ of them into smaller pieces to roll the finished balls in.

Honey

Any type of honey will work in this recipe, but clover honey has a nice mild flavor and won’t compete with the almond butter. You can adjust the amount based on how sweet you like these. 

Cinnamon

Cinnamon helps sweeten these energy bites a bit.

Salt

I added a little kosher salt to these to help balance the flavors – and well, they needed it!

How to Make Them

Step 1

I don’t think you’ll find a simpler recipe anywhere! Just place all the ingredients except ¼ cup of the chopped almonds in your food processor and pulse it until the mixture holds together when pressed.

Taste a little of the mix and adjust the honey and seasonings as you need to. 

Step 2

Using a small cookie scoop or a large spoon, form the mix into ~16 balls. Roll each in the reserved chopped almonds. 

Variations

The nice thing about this recipe is that you can mix and match the ingredients and make a variety of different flavors. 

  • Swap the almond butter and almonds for walnut butter and chopped walnuts.
  • In place of dried blueberries, try dried cranberries or cherries.
  • You can replace the honey with maple syrup.

Storage Tips

These are best eaten within a few days of making them. Store them in a resealable container or bag and to make sure they last, keep them in the fridge.  You can freeze them as well. Just wrap them tightly.

Ingredients
  

  • 1 cup old-fashioned oats
  • 1 cup almond butter unsweetened
  • ½ cup dried blueberries
  • ½ cup almonds, chopped divided
  • 1 ½ tbsp honey
  • ½ tsp cinnamon
  • 1 tsp kosher salt

Instructions
 

  • Place the oats, almond butter, blueberries, ½ the almonds, cinnamon, honey, and salt in the bowl of a food processor. Process until combined, and the mixture holds together when scooped into a ball.
  • Place the remaining chopped almonds in a small tray or on a plate.
  • Using a small scoop or spoon, scoop about 2 tablespoons of the mixture out and form into a ball. Roll in the chopped almonds until covered.
  • Continue with the rest of the mixture. Store energy bites in an air-tight container.
