What You Will Need to Make the Energy Bites
Oats
Old-fashioned oats or quick cooking oats will work best for this recipe.
Almond Butter
If you are watching your sugar intake, stick with unsweetened. You can adjust the sweetness by adding a little more honey.
Dried Blueberries
Look for unsweetened dried blueberries. I find them in my local grocery store, but you can always order them if you have trouble finding them.
Almonds
Blanched, slivered almonds work nicely for this. Chop ½ of them into smaller pieces to roll the finished balls in.
Honey
Any type of honey will work in this recipe, but clover honey has a nice mild flavor and won’t compete with the almond butter. You can adjust the amount based on how sweet you like these.
Cinnamon

How to Make Them
Step 1
I don’t think you’ll find a simpler recipe anywhere! Just place all the ingredients except ¼ cup of the chopped almonds in your food processor and pulse it until the mixture holds together when pressed.
Taste a little of the mix and adjust the honey and seasonings as you need to.
Step 2
Using a small cookie scoop or a large spoon, form the mix into ~16 balls. Roll each in the reserved chopped almonds.
Variations
The nice thing about this recipe is that you can mix and match the ingredients and make a variety of different flavors.
- Swap the almond butter and almonds for walnut butter and chopped walnuts.
- In place of dried blueberries, try dried cranberries or cherries.
- You can replace the honey with maple syrup.
Storage Tips
These are best eaten within a few days of making them. Store them in a resealable container or bag and to make sure they last, keep them in the fridge. You can freeze them as well. Just wrap them tightly.

- 1 cup old-fashioned oats
- 1 cup almond butter unsweetened
- ½ cup dried blueberries
- ½ cup almonds, chopped divided
- 1 ½ tbsp honey
- ½ tsp cinnamon
- 1 tsp kosher salt
Instructions
